Apple Upside-Down Cake bakes in only 12 minutes in a microwave oven, and takes only about 15 minutes to prepare.
Wash and core the apples and cut into 1/8 inch thick slices from top to bottom. Line the bottom and the sides of a glass baking dish with the apple slices.
Combine the dry ingredients in a mixing bowl and blend together.
In the container of a high speed blender place the two peeled bananas, cover the blender, and run the blender at high speed until creamy smooth.
Add the blended banana to the dry ingredients in the mixing bowl, and mix thoroughly. If the mix is too stiff wash out the blender container with a little apple juice or water and add to the mixing bowl and mix again adding additional water or apple juice to bring the dough to the proper consistency.
Gently spoon in the dough into the baking dish being careful not to disturb the apple slices. Smooth out the remaining dough in the baking dish so that it covers the apples along the sides.
Cover the baking dish and place in the microwave oven for approximately 12 minutes. (check to make sure that the cake is baked on the bottom by lifting the baking dish)
Remove the baking dish and let cool on a wire rack.
When cool, run a flat table knife around the edge of the cake and lift slightly to release the cake from the bottom. Place a large plate upside-down over the top of the baking dish and holding the two together, invert them and the cake should fall out onto the plate.
Serve and enjoy!
