Bread - Spelt Barley Pumpkin Pie

4 tsp. Dry Yeast
3 cups Whole Grain Spelt Flour
1 cup Barley Flour
3 tsp Cinnamon
1-1/2 tsp Ginger
1/2 tsp Cloves
1 tsp. Soya Lecithin, liquid
 cup Molasses
1 cup Pumpkin, pureed, canned
1+ cups Apple Juice, warmed to 52C. (125 F.)
Sunflower Seeds

Add the ingredients in the order listed. Place the Dry Yeast, Flour, Cinnamon, Ginger, and Cloves in a mixing bowl or in the bread maker container. Add the Soya Lecithin, Molasses, the pureed Pumpkin, and about 1/2 of the Apple Juice.

Begin the kneading process, adding additional Apple Juice as necessary to keep proper consistency. We have found that the amount of Liquid (Apple Juice) necessary will vary from day to day. The total kneading time should be approximately 20 minutes.

Place the dough on a bed of sunflower seeds, or on a clean floured counter top or pastry sheet and form into a cylinder about 1/3 m. (12") long. Cut in two pieces and reform into two loaves. Final length should be slightly less than the length of the baking pan. Place in two 12 cm. X 24 cm. (4-1/2" X 9") bread pans.

Set the warming drawer of your oven to low, or set your oven on a warm setting of 40C (110-115F). Be careful that the oven does not overheat. Place the bread pans in the drawer or oven to raise the dough.

When the dough is slightly over double the size, turn the heat up to 175-180C (350-360F). Bake for approximately 35 minutes. Different ovens seem to have slightly different baking times, so we suggest that you check the bread after 30 minutes.  When the crust is firm, but not crispy, the bread is done. Remove the bread from the oven and from the baking pans. Let loaves cool on a wire rack.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live!
