Bread - Spelt Barley Rolls with the Works
a great way to liven up a sandwich


 4 tsp. Baking Yeast
3 cups Spelt flour
1 cup Barley flour
1 tsp. Lecithin
2 cups Water (approx.)


Caraway Seeds
Rolled Oats
Kosher Salt
Dried Onion Flakes
Black Pepper
Poppy Seeds
Sesame Seeds


Add the dry bread ingredients to a mixing bowl or dough mixer in the order listed.  Form a depression in the dry ingredients and add the lecithin, and 1/2 of the water.  Mix and knead the mixture adding water as necessary to maintain proper dough consistency.  The total kneading time should be approximately 20 minutes.  (See our step by step pictorial bread making article.)

Place a thin layer of a mixture of caraway, poppy and sesame seeds, dried onion flakes, coarse kosher salt and pepper (quantities of each as desired to equal about 3/4 to 1 cup in total) on a bread board or clean counter top.  Place the dough on the coating ingredients and form into a cylinder about 1/2 m. (18") long.  Cut into twelve pieces and reform each piece into a roll making sure that the the entire surface, including the ends are coated with the coating ingredientsPlace the rolls on a baking or flat bread pan (we prefer terracotta), that has been dusted with corn meal to keep the dough from sticking.


Set the oven to warm setting �40�C (110�F), or a warming drawer on "low".  Be careful that the oven or warming drawer does not overheat.  Place the bread pan in the oven to raise the dough.   When the dough is slightly over double the size, turn the heat up to 175-180�C (350-360�F).  Bake for approximately 25-35 minutes.  (We have found that the baking time varies from oven to oven.)  When the crust is firm, but not crispy, the bread is done.  Remove from oven.  Let cool on a wire rack.  Enjoy!
