(Bok Choy, Baby) Baby bok choy are immature heads or bunches of bok choy that are harvested as a
specialty or gourmet item. Baby bok choy are more tender than mature bok choy,
which makes them great for cutting raw into salads. Since baby bok choy are
generally more expensive than mature, we have found that they are not worth the
difference in cost if we are cooking them, and we could not find any specific
nutritional information that would indicate that they have any more nutritional
value. When purchasing baby bok choy, choose ones that are free of blemishes or
