Fusilli with Tomatoes and Un-Cheese Sauce

Ingredients

1 lb. Whole Wheat Fusilli
4 lbs. Tomatoes, diced, fresh or canned
3 Onions, medium sized
2 tsp. Sweet Basil, dried
1 tbsp. Oregano, dried
Hot Pepper Sauce, to taste
4 cups Beans, white (any variety), fresh cooked or canned
1/2 cup Lemon Juice
1-1/2 cups Nutritional Yeast

Preparation

This recipe will make 6 servings, and can be prepared on the stovetop or in a microwave oven, and then baked in the microwave oven or in a conventional oven.

Place the pasta pot on the stove top with water and heat until the water begins to boil.

While the water is heating, peel and wash the onions.  Dice them, and add to a large microwaveable covered baking dish.  Add the basil, oregano, and hot sauce, mix well, cover, and cook until the onions become semi-transparent. 

If using fresh tomatoes, they may be cooked with the onions.

When the water begins to boil, add the fusilli and cook until it is tender, but still chewy.

Add the beans, lemon juice, and nutritional yeast to the container of a high speed blender, and run the blender on high speed until the ingredients are creamy smooth.

Combine the cooked pasta, onions, tomatoes, and un-cheese sauce together and mix well.

We like to bake the fusilli and un-cheese in an uncovered baking dish until the top begins to dry out and the liquid is still boiling along the edges.  Bake in your microwave oven on "high" or in a conventional oven at 350 degrees F. Remove from oven.

Serve and enjoy!  It goes great with a large tossed salad.  Leftovers can be stored in the covered baking dish in the refrigerator for a few days.
