This is a simple way to get to know vital wheat gluten. You’ll need a
crock pot (if you don’t have one, just use an oven-proof pot & lid and
bake at your oven’s lowest setting.
Don’t let the instructions intimidate you. Once you get the hang of it,
you’ll be able to whip this together in 15 minutes!
One onion, chopped
One clove garlic, crushed, chopped
1 tsp.-Tbsp. toasted sesame oil
Sauté onion & garlic in oil.
Add:
2 cups water
¼ cup soy sauce
2 tsp. kitchen bouquet (you can use 1-1/4 tsp. liquid smoke instead and
get somewhat of a “ham” flavor — but be sure to add ¼ tsp. crushed clove
and 1 tsp. to 1 Tbsp. maple syrup to the butter/garlic coating at the
end of this recipe).
Mix together and add:
2 Tbsp. Nutritional yeast
1 tsp. salt
½ tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
¼ tsp. sage
¼ tsp. poultry seasoning
(again, if you have herb mixtures you already enjoy, substitute and
experiment with this)
Let this mixture come to a boil, then simmer for 5 minutes.
In a bowl, mix together:
2 cups vital wheat gluten (not gluten flour, use real vital wheat
gluten)
2 Tbsp. Nutritional yeast
1 tsp. salt
½ tsp. pepper
1 tsp. EACH onion powder and garlic powder
(Okay, this is starting to sound just like the dry mixture we put in
the water, and yes, it is pretty much the same—that’s part of the secret
of the fabulous taste of the roast. Let’s continue.)
After the liquid mixture has simmered, strain liquid into another
container and add onion/garlic to gluten mixture.
Then, pour one cup of the liquid into the gluten mixture,
adding ¼ to ½ to 1 cup more of the remaining liquid mixed
with some water (1/4 to ½ cup).
Continue mixing until you have a moist dough ball.
Grease crock pot (if you don’t use a crock pot, an ovenproof dish
will work) with vegan shortening (spectrum makes this).
Pour half remaining liquid into pot.
Mix:
One clove garlic, crushed & chopped
1 Tbsp. Vegan margarine
Rub roast top and bottom with butter/garlic mixture.
Place in crock pot or oven pan.
Pour remaining liquid over roast.
Cook in crock pot 6-8 hours or bake at 250 degrees for 5 hours.
Just as with “seitan,” this can be sliced for sandwiches, fried with
onions, peppers & garlic, stripped and thrown into a veggie stir-fry.
