It seems like so many schools are now joining in on the awesome Meatless Monday movement, and California State University, Chico is the newest school to dig in!
The home of the Wildcats is making more meat-free options available on Mondays and is now educating students about the health benefits that go with eating meat-free. It sounds like they get some delicious meat-free food options too, such as green chili, olive enchilada casserole with black beans, pico de gallo and fresh lettuce, and also teriyaki edamame stir fry with Napa cabbage and steamed rice.
The Humane Society of the United States is thrilled to hear of the recent news, and they are praising Chico for becoming the latest school to participate in the international movement.
“Choosing meat-free options just one day a week helps spare animals from factory farms, helps our environment and improves our health,” said Kristie Middleton, food policy manager at The Humane Society of the United States. “We’re pleased that Cal State University, Chico is the latest school to show that being healthy can also be delicious.” Chico students should soon learn that healthy also means delicious, given the amazing food selections they are given.
Chico Dining Services explained the reasoning for the transition into meat-free Mondays and how it’s for the good health of the students and to make the planet a better place.
“Cal State University, Chico Dining Services is committed to ensuring the good health of our students, and being a good steward to our planet and animals, which is why we’re participating in Meatless Monday,” said George Rankin, Dining Services Director at CSU, Chico.
