Food Giants Turn Veggie in Gujarat

Big brands in the hospitality sector are modifying their business models when it comes to catering to vegetarian Gujarat.

After Pizza Hut, Marriott and Dominos went veggie in the state, well-known chef Sanjeev Kapoor has jumped onto the bandwagon. The master chef's chain of restaurants The Yellow Chilli' will open its first-ever all veg' restaurant in Ahmeadabad.

"It was obvious to go for a veg only restaurant in this market. For our 13 other Yellow Chilli restaurants across the country, the menu is similar. Ahmedabad is a different market. Here, we have not only changed the menu but also serve Jain food," says Kapoor.

Kerala's tourism department too plans to cash in on the veggie taste of Gujaratis. "As a part of Dream Season' campaign to woo Gujarati tourists, we have made arrangements for a separate vegetarian kitchen in around 500 hotels registered with us. Jain food would also be made available even in the remote tourist destinations," said M Sivasankar, director, Kerala Tourism. Of the 70 lakh domestic tourists visiting God's own country last fiscal, about 10 per cent were Gujaratis.

Some time ago when Pizza Hut had done a market survey in Ahmedabad before opening its first outlet in Gujarat, it was surprised by the overwhelming response for a vegetarian outlet. Based on the mandate, the food giant set up in Ahmedabad its first vegetarian pizza outlet in the world.

An Ahmedabad-based hotel and restaurant chain is set to open a five star pure vegetarian hotel in the diamond city of Surat again a first in the world.

"Good hotels serving vegetarian food only do good business at pilgrim places. People prefer hotels serving veg food even if it is not a five star category property," says Narendra Somani, CMD of Bhagwati Group, which will open the all veg five star hotel in Surat in June this year.

Pizza brand Dominos also made it a point to open two only-veg outlets in Ahmedabad looking to the client base. Another international hospitality giant, Marriott, in a first, opened a vegetarian restaurant Shakahari' at Courtyard by Marriott' in Satelite in February this year.
