The great thing about this pasta salad is it�s not made
with mayonnaise. Although you should be mindful about the safety of ANY
food at a picnic, there is less worry about the spoiling of foods that
don�t contain animal ingredients.
12 oz pkg tri-colored pasta twists
2 cups shredded carrot
2 medium tomatoes, diced
2 cups diced cucumber
2 cups diced zucchini (uncooked)
1/2 cup black olive slices (optional)
1/3 cup olive oil
1 Tablespoon parsley
1 teaspoon oregano
1/2 teaspoon basil
salt and pepper to taste
Prepare pasta according to package directions. Drain.
Cool under running tap water; drain well. Place pasta in large bowl. Add
remaining ingredients and stir well to mix thoroughly. Cover and chill
two hours. Stir again before serving. Mangia!
