SPICED POTATO FINGERS
This recipe was sent to us by Gracia Fay Ellwood, one of our
sustaining members and editor of the monthly journal The Peaceable Table

Gracia experimented with a previous recipe published in Take Heart!
and came up with one of her own.
Preheat oven to 425 F.
1 medium potato
1 teas. olive oil
1 teas. paprika
1 teas. garlic powder
1 teas. onion powder
1/2 scant teas. salt
1 rounded teas. dried parsley
Peel potato and cut into finger-sized pieces. Drizzle oil over pieces
and stir. Mix spices and salt; sprinkle mixture on the pieces, a little
at a time, stirring. Spread the fingers on a nonstick cookie sheet and
bake for 15 minutes or less, until soft in the centers.
Serves one person.
Suggestion: Have the spuds with peas, a combo making for a
pleasant contrast in taste and providing a main protein source. These
fingers taste as good as french fries and are MUCH healthier. I have
made the recipe five or six times already, in spite of the heat of the
season.
