Christian Vegetarian Association Presents:
Take Heart!

Unsurpashed Potatoes

Ingredients

- Large potato

- Two medium carrots

- One medium-to-large clove garlic

- Soy cheese, (preferably "Follow Your Heart," available in Whole Foods

- markets. AVOID any cheese with casein.)

- 1 - 2 T of soy milk

- Salt (optional)

- Earth Balance spread (optional)

Preparation

Scrub and slice the spuds and carrots; steam together until soft.

While they are cooking, finely mince the garlic and grate the cheese or cut into chips.

Drain off broth and dump veggies into cooking pan.

Heat the soy milk in bottom of pan, remove from heat.

Mash; add garlic, add cheese a little at a time, and stir.

A sprinkle of salt may be added to each serving, and maybe a dab of Earth Balance spread, but it is quite good without the latter.

Serves two.
