I understand you feel we should remain vegetarian, but read further in Genesis. The fall of humankind required a blood sacrifice by God to bring man back into relationship with Him. In Genesis 9 the Lord makes a covenant with Noah, and gives him the animals for food.

Also the Mosaic covenant requires blood sacrifices to be made. This is all a requirement of God, and part of His progressive revelation, which eventually led to the final atonement of Jesus Christ. Without the Old Testament atonements we have no New Testament, or Messiah.
