"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful. At the same
time, I see all the suffering and corruption going on in the world, and feel
called to help expose and end it so that we may have true peace and compassion.
In other Blogs of mine, I’ve mentioned how we like to try new (to us)
ingredients (plantains and black sticky rice, for example).
This week we bought a couple of black radishes that we found in the produce department of a supermarket. (It’s been several months since we’ve seen any sold around here.)
We had used black radishes before and had come up with a salad dressing and dip that I really love. Yesterday we had this dressing on our tossed salad of romaine lettuce, carrots, celery, cauliflower, onion, and cabbage.
These are the ingredients:
Black Radish Dill Tofu Salad Dressing and Dip
Ingredients
1/2 cup Lemon Juice
1 lb. Tofu (or canned beans, drained, instead of tofu)
1 Black Radish, medium size
2 tsp. Mustard Seed, ground
1 tsp. Turmeric, powder
1 tbsp. Dill Weed, dry 1/2 tsp. Salt (optional)
1/8 tsp. Stevia Extract, white powder (optional)
