"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful.  At the same time, I see all the suffering and corruption going on in the world, and feel called to help expose and end it so that we may have true peace and compassion.

 


Comfort Food – 18 December 2006

Split Pea SoupThis morning I made one of my “comfort foods” – Green Split Pea Soup.

As we usually do, I made enough to last a couple of days. This time I added two diced potatoes to the ingredients below, and I used only one chipotle pepper because the last ones we bought are much hotter. I really like the smoke flavor that chipotles add; and if I didn’t have the chipotles, I would use “liquid smoke” (I have a large bottle of it – no animal products in it) and cayenne pepper. I should also mention that we like our soups very thick!

2 lbs Split Peas, dried
12 cups water
2 tsp Oregano, dried
4-6 Bay Leaves
2 Chipotle Peppers (smoked jalapeno peppers)
3 Cloves Garlic
4 Onions, medium size
1 lb Carrots
4-5 Ribs Celery
