"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful. At the same
time, I see all the suffering and corruption going on in the world, and feel
called to help expose and end it so that we may have true peace and compassion.
Today we had fun cooking up a big batch of Vegetable Lo Mein (Chinese Style Pasta) with Fettuccine and Chipotle Pepper Peanut Sauce. We used our large stainless steel wok without adding any oil; and in addition to the rest of the ingredients, we added frozen green beans.

Here are the ingredients we used today:
1 lb. Fettuccine, Whole Wheat
4-5 lbs. Cabbage
2 lbs. Carrots
4 Celery, ribs, large
1-1/2 lbs. Onions
2 lbs. Green Beans, frozen
1 tbsp. Ginger, ground
4 tbsp. Bragg Aminos
1/3 cup Peanut Butter, Natural
8-10 Dates, pitted
1 Chipotle Pepper, small
We have noticed that some chipotle peppers are much hotter than others of the same size; so, to be on the safe side, I try to use small ones or a piece of a larger one.
This batch of Vegetable Lo Mein will last a few days refrigerated. Then all we have to do is reheat individual portions in the microwave oven, and enjoy it with a large tossed salad.
