Cucumbers, Kirby
(Cucumbers, Kirby) Kirby cucumbers are about half the size of a regular cucumber, with all the flavor of the full-sized cucumber. Kirbies make the snappiest pickles and they're also good raw. Their thin skin doesn't need to be peeled, if it is not waxed, which they are not when purchased at farm stores. Just wash and eat. Or dice and toss with your favorite dressing in a salad. We rarely see Kirby cucumbers in supermarkets. The ones we purchased are from a farm store, but they are usually more expensive that the regular cucumbers. We could not find any complete nutritional information for Kirby cucumbers. Therefore, we suggest that you look at the general nutritional information for cucumbers.

Vegan FlagThe above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
