Kirby cucumbers are about half the size of a regular cucumber, with all the
flavor of the full-sized cucumber. Kirbies make the snappiest pickles and
they're also good raw. Their thin skin doesn't need to be peeled, if it is not
waxed, which they are not when purchased at farm stores. Just wash and eat. Or
dice and toss with your favorite dressing in a salad. We rarely see Kirby
cucumbers in supermarkets. The ones we purchased are from a farm store, but they
are usually more expensive that the regular cucumbers. We could not find any
complete nutritional information for Kirby cucumbers. Therefore, we suggest that
you look at the general nutritional information for
cucumbers.
