(Parsley, Dried or Flakes) Dried parsley is also referred to as parsley
flakes. We keep dried parsley leaves on hand for adding a mild parsley flavor to
cooked foods, and when we don't have fresh parsley on hand. A simple rule to use
for substituting dried for fresh is to use 1/3 of the amount of dried parsley
for the amount of fresh parsley called for in the recipe (i.e. 1/3 cup of dried
= 1 cup fresh, or 1 teaspoon dried = 1 tablespoon fresh). Commercially made
dried parsley or parsley flakes are made by freeze drying. It can also be made
at home in a dehydrator. See the nutritional information below.
