Cashew-Natural Brown Rice Loaf
1 cup raw cashews
2 cups steamed brown rice
1 cup soy or nut milk
2 large onions, chopped
4 slices whole wheat bread, crumbled
4 Tbs. expeller-pressed canola oil
2 Tbs. soy sauce
4 Tbs. minced parsley
1/2 t thyme or sage
In food processor or food grinder, chop fine the
cashews. Pour into large bowl.
Place the onion, quartered, and the crumbled bread in the food
processor.
Pulse on and off about 30 seconds, until onions are chopped fine, but
not
minced. Add to nuts, along with remaining ingredients. Stir well.
Place in covered baking dish. Place dish in pan of
water.
Bake 1 hour at 350 degrees.
Serve with your favorite vegetarian or vegan gravy if
you like.
