2 pounds Light Life lean links Italian style sausage
2-3 medium cloves of garlic
2 med. onions chopped
1 can (28 ounce) whole tomatoes, mashed
1 recipe, beefless broth (recipe follows)
1 heaping teaspoon basil and one heaping teaspoon oregano
1 Tablespoon dried parsley
1 med pepper (green pepper) chopped
2 med. zucchini, sliced
For the beefless broth, measure 30 ounces of water in a
measuring cup.
Add 4-6 Tablespoons of soy sauce. Don't use cheap brands - they taste
too
toasty. Use "Kikkomann's" for store bought, or preferably tamari or
shoyu.
If desired, add more soy sauce to taste. The two main flavors are the
sausage and the beefless broth.
In microwave, defrost the sausage until links can be
broken apart easily.
Separate the links on a plate until they shrink and firm up, about 2
mins.
You should cut them into 1 inch pieces w/o sticking to the knife.
Microwave
again if not firm enough - don't dry them out though.
Dump all into crock pot and cook on LOW setting for
several hours - you may
want to add 1-2 cups of water if you'd like. Also, you may want to add
the tomato
last, since tomato products should never be overcooked in the crock pot.
They
have a tendency to get rancid
