Apple Bars
24 pieces
Crust:
6 ounces soy margarine, melted
2 cups unbleached flour
1 cup Sucanat
1/2 cup rolled oats
Filling:
6 cups peeled, chopped apples
1 cup unrefined sugar
1 cup purified water
1 teaspoon vanilla extract (preferably without alcohol)
1/2 teaspoon ground cinnamon
1/4 cup unbleached flour
Heat oven to 350 degrees.
In large bowl, stir together melted margarine and Sucanat until
Sucanat is
dissolved. Add 2 cups flour and rolled oats; mix well with fork. Reserve
one
cup for topping. Press remaining mixture into a 9 x 13 inch pan coated
with
non-stick cooking spray. Spread apples over crust.
In saucepan, mix sugar, water, vanilla, cinnamon and flour. Cook,
stirring
constantly, on medium heat to thicken. Pour mixture over apples.
Sprinkle
reserved oat mixture on top.
Bake 45 minutes. Let cool on rack before cutting into 1 1/2 x 3 inch
bars.
