My own personal WHITE BEAN SOUP
(2 to 3 servings )
1 15 oz can white beans, drained and rinsed
1 15 oz can diced tomatoes, undrained
1 1/2 cups water
1 Herb-Ox vegetable bouillon cube
1/2 white or yellow onion, chopped
2 garlic cloves, minced
1 carrot, sliced thinly
2 cups fresh mushrooms, sliced thickly
Cumin to taste
4 tablespoons or to taste: chopped fresh herbs
(sage, thyme, oregano, cilantro, chives, parsley)
Salt and pepper to taste
Add all ingredients to soup pot.
Bring to a boil, then simmer for about 1 hour minimum.
Towards the end, smash some of the beans with a fork
to thicken soup liquid. Garnish with a sprig of fresh herbs.
Have a huge bowl of soup with a salad or crusty French bread ---
Yummy and Oh So Healthy!
P.S. Do NOT use Knorr "Vegetarian Vegetable" cubes, they
contain
GELATIN....arrggghhhh.
Also, a scoop or two of fresh salsa or corn salsa per
bowl is delicious!
