3 med tomatoes
1 cucumber, peeled
½ bell pepper
1 long rib celery
½ sml onion
2 cloves garlic
1 can no-salt diced tomatoes
½ cup cilantro
2-3 tbsp balsamic
Juice and zest, 1 lime
Green onions, chopped
Chop first 4 items in food processor
Combine in bowl, add others and mix.
May also add mushrooms, palm hearts, carrots, etc.
