Recipes for those who wish to avoid salt/sugar/oils/flesh foods

- Soft meat of 2 young coconuts (about 1 cup)
- 1 large ripe tomato of any color (Heirloom are especially delicious)
- 6-10 large basil leaves
- 1/4-1/2 tsp. Himalayan Salt Crystals
- drizzle of olive oil
- 1 Tbs. fresh oregano, chopped
- 1 clove garlic, crushed
- Serves 2-4
Open the young coconuts and scrape the meat out.
Slice the tomato into 1/8 inch thick slices and arrange on a plate. Cut the coconut meat into rounds about the same size as your tomatoes by using the rim of a glass or a round biscuit cutter. Place the coconut rounds on top of the tomato slices.
Mince the basil and oregano and mix with the garlic. Sprinkle the herb mixture on top of the coconut. Drizzle the platter with olive oil and sprinkle with salt to taste.
