God did not introduce meat into the human diet. Humans did it. Only then, did God reluctantly conceded to their evil desires, with limitations and a curse (Genesis 8:20-9:4), in the hope that they would one day return to His heavenly will. Some of the curses are the health and shortened lifespan that you spoke about. 

We also believe that your emotional feeling about eating and not eating flesh are also part of this curse, as well as being attuned to the unction of the Holy Spirit.  When humans eat a plant based diet, they are more at peace. We discuss this in more detail in our Bible and Discussion sections.
