The answer to your questions are really quite simple.

The vast majority of people eat animals, and wear their skins, and exploit them in many other ways. If they admit that these and other animals have souls and spirits and go to heaven, then they will also recognize that they are going against the will of God. They don't want to change their selfish and lustful lifestyle, and thus they deny the truth.
