We use asparagus in several of our recipes because we like it, but you can substitute other vegetables. Broccoli and or collard greens or kale might be the better choice with lemon flavor, and you may want to cut the amount of lemon juice back to about a half cup unless you like a strong lemon flavor. You can always add the remaining lemon juice at the end after you taste it.
As you have probably guessed, we love to experiment with different variations.
