I periodically visit your website mainly because your style of eating is very similar to mine. Actually your dishes look very much like those I prepare.
You seem to use very little fat in the various recipes displayed. I too use at most moderate amounts of fat, namely fats from whole foods such avocados, raw nuts, tahini. etc. I do not use any oils what so ever. Do you deliberately follow a lower fat diet?
As you have highlighted it's not all that difficult to eat wonderful vegan foods cheaply. I too am frugal and with some shopping around, bargaining, buying in season, in bulk as well as growing some produce eat a wide variety of vegan foods with very few funds.
Do you encourage visitors to your website to post recipes?
