Dear Richard:
Thank you very much for writing and for your questions.
In Genesis 1 and 2, we find that humans and other animals were all created as living souls (Hebrew neh-fesh khah-yaw), meaning that every being has a soul and spirit, When the Bible was translated into English, this very important fact was obscured, whether intentionally or unintentionally, we have no way of knowing, but there does seem to be some political pressure to do so, because if humans accepted the fact that the other animals have souls and spirits as we do, many could not "justify" the horrible way that animals are treated.
If we look at Leviticus 17:11, we see also in the Hebrew that it is the soul of the animals in the animals blood that makes atonement for the soul of the human. This is also a key Christian understanding as to why Jesus had to be a man as well as God, for it was His sinless soul that redeems humankind. And, since He is the Passover, there is no need to ever again shed blood.
