A Mary T. Hoffman Commentary from All-Creatures.org

"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful.  At the same time, I see all the suffering and corruption going on in the world, and feel called to help expose and end it so that we may have true peace and compassion.

Quick and Easy Cranberry Relish – 15 November 2007
By Mary T. Hoffman

Yesterday in “Hoffman Helpful Hint – 14 November 2007” (See http://www.all-creatures.org/heart/blog-20071114.html),  I wrote about cooking large quantities and gave as an example our recipe for curried collard greens, sweet potatoes, and lentils with brown basmati rice.

Today I want to mention that this dish is great with this quick and easy cranberry orange relish: In a blender put 12 ounces of fresh cranberries, 3-4 peeled navel oranges, and 8-12 pitted dates. Blend at medium speed until all the ingredients are finely chopped. Put relish into closed containers and store in the refrigerator until ready to serve. We store extra relish this way and serve it with the above-mentioned dish for several days.
