Knowing what we know now, if we had it to do over again, all dairy products (and anything containing milk derivatives such as casein or whey, for example) would be the first to be eliminated from our diet – for reasons of compassion as well as health. In The Uncheese Cookbook Joanne Stepaniak has this to say about dairy:

“Sweet gentle Bessie is hardly contented at all. She has been denied the natural life of a cow and the pleasures of foraging, ruminating and caring for her young (who are often taken from her at birth to be made into veal). She has been bred, medicated, implanted with hormones, artificially inseminated and kept perpetually pregnant to provide one thing only – continual milk production… When at last she is unable to keep up the demanded level of milk production, drained and exhausted, Bessie will be packed into a crowded truck for transport to her final destination – the meat processing plant.”

An oxymoron?
No! I see all the beauty of God's creation and I'm joyful.  At the same time, I see all the suffering and corruption going on in the world, and feel called to help expose and end it so that we may have true peace and compassion.
