Pumpkin Rice Pudding

Ingredients

2 cups Brown Rice (cooked in 4 cups of water)
1 - 20 oz. can Pumpkin (or precooked and blenderized pumpkin)
1 cup Apple Juice
1 Banana, large peeled (or 2 small Bananas)
20 Dates, pitted
1/2 cup Oats, rolled
2 tsp. Cinnamon, ground
1 tsp. Ginger, ground
1/2 tsp. Cloves, ground
2 cups Raisins

Preparation

Begin by putting the Brown Rice on the stove to cook.

Put the Apple Juice, pitted Dates, and peeled Banana into the cup of a blender; cover and blend on "high" until creamy smooth.  Set aside until the rice is cooked.

If the rice cooking pot is large enough, the other ingredients may be mixed in it; otherwise use a large mixing bowl.  Add all the remaining ingredients to the cooked rice and mix thoroughly.  Place the ingredients in a 9-inch X 13-inch X 2-inch deep glass baking dish, and smooth evenly.  Bake in the microwave oven on "bake" for about 20-30 minutes, or in a standard oven at 325 degrees for the same time.  Check the Pumpkin Rice Pudding after about 20 minutes.  If the top of the Pudding is firm or showing signs of "cracking" remove from the oven and let cool on a wire rack.
