When someone tries to serve meat to a vegetarian, I think an appropriate response would have been to state, in a factual (and NOT angry tone), "I think it is disrespectful to try to serve a vegetarian meat." (Note how this is a general statement of principles, not a statement "I am offended" or "you are offending.") In general, we should accept and maybe even play along with teasing about our diet.

We shouldn't try to communicate that being vegetarian makes us angry and hostile. Most importantly, being vegetarian isn't about us and our sensibilities as much as what animal agriculture does to the animals and the world. However, it crosses the line of decency to try to serve meat to a vegetarian, IMO.
