bread-orcardraisroll.jpg (687863 bytes)Ingredients
4 tsp. Dry Yeast

2 cups Whole Grain Spelt Flour
2 cups Whole Wheat Flour
2 tsp. Cardamom, ground
1 tsp. Soya Lecithin, liquid

12 oz. can of Orange Juice, frozen concentrate, warmed to 44C. (110 F.)
1 cup Raisins
Approx. 1/2 cup Water, warmed to 44C. (110 F.)

1/2 cup Sesame Seeds (for an outer coating)

Add the ingredients in the order listed, with the exception of the raisins, water and the sesame seeds.  Place the dry yeast and flour in the mixing bowl or in the bread maker container.  Add the cardamom, soya lecithin, and the orange juice.  Do not add the water at this time.  Begin the kneading process and add water only as necessary to keep proper consistency.  Make sure that the dough mixture is thoroughly mixed before adding any water.   We have found that the amount of water necessary will vary from day to day.   Add the raisins and continue kneading.  The total kneading time should be approximately 20 minutes.

Place a thin layer of sesame seeds on a bread board or clean counter top.  Place the dough on the sesame seeds and form into a cylinder about 1/3 m. (12-15") long.  Cut in twelve equal pieces and press the cut ends into the sesame seeds making sure that the the entire surface is coated with the sesame seeds.  Place the rolls on cookie sheets or terracotta bread pans coated with a little corn meal.

Set the oven to warm setting 40 - 45C (105 - 115F).  Be careful that the oven does not overheat.  Place the bread pans in the oven to raise the dough.   If the oven has a warming drawer, it may be used instead of the oven to raise the dough.  When the dough is slightly over double the size, turn the heat up to 175-180C (350-360F).  Bake for approximately 25 minutes.  When the crust is firm, but not crispy, the rolls are done.  Remove the rolls from the oven and from the baking pans.  Let cool on a wire rack.  Enjoy!

The above recipe is in keeping with God's creation intent (Genesis 1:29-31):  'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.  And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so.   God saw all that he had made, and it was very good.' (NIV)  Let no animal suffer or die that we may live! (d-3)
