Broccoli Rabe, Onions and Potatoes
2 lbs. Broccoli Rabe
2 Onions
2 lbs. Potatoes
1/4 cup Lemon Juice (optional)
Cayenne Pepper or Hot Sauce (to taste)

Preparation

We usually cook this broccoli rabe, onions and potatoes recipe in a large covered baking dish in our microwave oven on high heat, but it can also be cooked in a conventional oven at 350 degrees F. This recipe will serve 2-4 adults as a main meal, and is great for leftovers, which can be stored in the cooled covered baking dish in the refrigerator for a couple of days.

Begin by washing and cleaning the broccoli rabe. Coarsely chop the broccoli rabe and put in the baking dish.

Clean and peel the onions, coarsely dice, and add to the broccoli rabe in the covered baking dish.

Wash the potatoes and remove any eyes or bad spots (peels may be left on), cut into bite-size pieces and add to the baking dish.

Add the lemon juice and hot pepper to the baking dish, mix well, cover, and cook until the onions become translucent and potatoes are soft, mixing every 10 minutes to insure uniform cooking.

Serve the broccoli rabe, onions and potatoes with a large tossed salad and enjoy.
