Ingredients

Carob Fudge Brownie Cake

Brownie Cake Ingredients
1 Cup Whole Wheat Flour
1 Cup Oat Flour
1 Cup Walnuts (coarsely chopped)
1/2 Cup Vegetable Oil
1 Cup Date Butter (see below)
4 tsp. Vanilla
2 tsp. Soya Lecithin
2/3 Cup Soy Milk
1 tsp. Salt
1-1/2 tsp. Cafix, Roma or other coffee substitute
1/2 Cup Carob Powder - dark roasted

Frosting Ingredients
1/2 Cup Water
1/2 Cup Carob Powder (dark roasted)
1/4 Cup Water
3/4 Cup Date Butter (see below)
1/2 Cup Peanut Butter or Almond Butter (smooth)
1 tsp. Vanilla
1/4 tsp. Salt

Date Butter Ingredients
1-1/3 Cup Pitted Dates
1 Cup Boiling Water

Preparation

2 Carob fudge brownie cake is a delicious vegan recipe that will make 8 servings and takes about 20 to 30 minutes to prepare (before and after baking), and 30 minutes to bake. (To enlarge the photo of the carob fudge brownie cake, click on the photo or link)

Preheat Oven to 375°F. Place the first three brownie cake ingredients in a mixing bowl and blend together. In another mixing bowl blend the remaining brownie cake ingredients. Add the liquid mixture to the dry mixture and fold together quickly.  Lubricate an 8" X 8" or 6" X 10" glass baking dish with Lecithin and spread the Brownie Cake mix evenly in the baking dish. 

Place the baking dish in oven for 15 minutes.   Reduce heat to 350°F and bake for another 15 minutes.  Be careful not to over bake. When the brownie cake is baked, remove from the oven and let cool on a wire rack

While the carob fudge brownie cake is baking, put the first two frosting ingredients in a saucepan, stirring constantly until thick over medium heat.  Remove from heat.

In the container of a high speed blender place the date butter ingredients and let stand for 5 minutes.  Blend at high speed until smooth.

 Add the remaining frosting ingredients together.  Mix well.

Spread the frosting on the cooled cake.
