Collard Greens and Beans (Tex-Mex Style) Tortilla
Collard Greens and Beans
Tortillas, whole wheat or corn
Salsa, your favorite
Ripe Olives, sliced (optional)

(Sandwich - Tortilla with Lettuce) Begin by placing a warmed tortilla on a plate. Then add some romaine lettuce pieces...
(Sandwich - Tortilla with Lettuce and Salsa) Then spoon on your favorite salsa...
Then spoon on the collard greens and beans. Be careful that you don't over fill the tortilla, and that all the filling ingredients are to one side of center. If desired, you can top off the tortilla with some olive slices.
The fold the two side up and over the filling, keeping it away from the back end, and pinch or fold the tortilla closed on then one end. Eat the tortilla from the open end. Enjoy!
