Lentil Millet Flatbread
1 cup Lentil Flour or ground Lentils
1 cup Millet Flour or ground Millet
2 tsp. Baking Powder

Lentil millet flatbread is a quick and easy to make gluten-free bread for a sandwich, or for eating at any meal. This recipe will make six 5 inch diameter flatbreads, or two dinner plate size flatbreads. We usually bake these lentil millet flatbreads in our microwave oven; the 5 inch flatbreads take a couple of minutes each, or they can be baked in a pre-heated conventional oven at 350 degrees F. in about 15-20 minutes.

We usually grind our own flour in our Vita-Mix dry container. For this recipe, we ground the lentils and millet together at high speed.

Place the flour and baking powder in a mixing bowl, mix together thoroughly, and add enough water to mix into a soft cookie dough or a stiff pancake batter consistency.

Spoon out the lentil millet flatbread dough onto microwaveable plates or onto a non-stick or lightly oiled baking sheet.

Be careful not to over bake.

In a conventional oven, when the top of the flatbread becomes firm, the flatbread is most likely finished baking. Remove from the oven and check the underside by lifting with a spatula. If it is no longer wet, remove from the oven and allow to cool.

When baking in the microwave, bake one plate at a time. With a 5 inch diameter lentil millet flatbread it takes about one and a half minutes to bake on the top side; then flip over with a spatula, and bake for another 15 seconds if the underside is too soft. Cool and enjoy.
