Ingredients

Kale and Rice with Tofu Chipotle Sauce
3 lbs. Kale
1 lb. Onions, diced
1 Chipotle Pepper
1 lb. Tofu, firm
1 tsp. Turmeric, powder
1/2 cup Lemon Juice
1 cup Nutritional Yeast, flakes
3 tbsp. Corn Starch
2 cups Brown Rice cooked in 4 cups of water

Preparation

Kale and rice with tofu chipotle sauce is a spicy vegan recipe that will serve 6 adults as a main meal. Kale and rice with tofu chipotle sauce can be prepared in a large covered glass or ceramic baking dish in either a microwave oven on "high," or in a conventional oven at 350 degrees F. Leftovers can be stored in the covered baking dish in the refrigerator for a few days.

Begin by putting the water in a separate rice pot on the stovetop and bring to a boil.

While the rice water is heating, peel and dice the onions and place in a large covered glass or ceramic baking dish. 

Thoroughly wash the kale (save a few of the tender inner leaves for garnish, if desired) and coarsely shred in a food processor or by cutting with a knife.  Add the shredded kale to the onions in the covered baking dish, cover and cook in a microwave oven on "high," or in a conventional oven at 350 degrees F. until the onion pieces become semi-translucent and the kale is tender. Mix every 5 minutes to ensure even cooking.

When the water in the rice pot begins to boil, add the brown rice, cover, and reduce the heat to simmer and cook until all the water is absorbed into the rice.

Place the chipotle pepper, tofu, lemon juice, turmeric, nutritional yeast, and corn starch in the container of a high speed blender.  Cover and blend on "high speed" until creamy smooth.

When the kale is tender and the onions are cooked, add the cooked rice and the blenderized tofu ingredients and mix thoroughly.  Cover and place back in the microwave or conventional oven and cook for another 5 minutes.  Mix again and cook for another 5-10 minutes or until the casserole is firm.  If cooking in a conventional oven, mix after about 10 minutes and then bake for another 15-20 minutes.
