Ingredients

Mushroom Asparagus Spaghetti
1 lb. Spaghetti, Whole Wheat or other whole grain
2 lbs. Asparagus
1 lb. Mushrooms, White or Baby Bella
2 Onions
1 28-oz. can Crushed Tomatoes
1 6-oz. can Tomato Paste
2 tbsp. Basil, dried
2 tbsp. Oregano, dried
1 tsp. Garlic
1/2 to 1 tsp. Fennel Seeds
Hot Pepper (to taste)

Preparation

Mushroom Asparagus Spaghetti is a satisifying vegan treat for the whole family, which will serve four to six adults as a main meal, and takes about 45 minutes to prepare and cook.

Start by washing and cleaning the veggies. Cut the onions in half from stem to root and then thinly slice them to make semi-circles, and place them in a large covered microwaveable dish. Cut the asparagus into bite-sized pieces and add to the dish. Cut the mushrooms into the thickness you desire and add to the dish.

Add the basil, oregano, fennel seeds, garlic, and mix well, cover, and cook in the microwave oven until the veggies are tender.

While the veggies are cooking, cook the spaghetti in a pot on on the stovetop.

When the veggies are almost cooked to the texture you desire, add the crushed tomatoes and tomato paste, mix well, cover and finish cooking the veggies.

When the veggies and pasta are cooked, combine together and mix well.

Serve and enjoy!
