Tortilla Pizza with Tex-Mex Pinto Beans

Ingredients

Corn Tortilla
Pinto Beans - Tex-Mex Style

Preparation

This is a quickly prepared snack or meal, which we consider to be one of our fun (but healthful) foods, which we make in our microwave oven in just a few minutes. Place a 6-inch corn tortilla on a microwaveable plate. (To enlarge the photo of the tortilla pizza, click on the photo or link)
Place the plate with the tortilla in the microwave oven, and heat on high (1,000 watts) for 40 seconds, which will cause it to puff up. Use less time if the wattage is higher, and more time if the wattage is lower. (To enlarge the photo of the tortilla pizza, click on the photo or link)
Turn the tortilla over, and heat on high for about another 30 seconds, or until the tortilla just begins to brown (the maximum you want to brown the tortilla is like the one in the photo).  Be careful not to over cook.  We have found that different microwave ovens cook differently, so once you get the timing correct on the first tortilla, adjust this recipe for those cooking times. Remove the plate and tortilla from the microwave oven, turn the tortilla over and place 1 heaping tablespoon of the Pinto Beans - Tex-Mex Style mix on the toasted tortilla and smooth out to the near the edge. (To enlarge the photo of the tortilla pizza, click on the photo or link)
Place the plate and tortilla back into the microwave oven, and cook on high heat for another minute, or until the shininess of the pinto bean mix disappears and shown in the photo. Serve and Enjoy!
