Curried plantain pea rice is a deliciously mildly spicy vegan recipe that will make about 8 adult servings for a main meal and takes about 45 minutes to prepare and cook.
Begin by placing the rice pot with the 4 cups of water on the stove and turn the heat to high. When the water boils, add the rice, cover, and simmer until all the water is absorbed. See our recipe for cooking Brown Basmati Rice.
While the rice water is heating, wash, peel, and dice the onions, and place in a large covered glass or ceramic baking dish. Cook in the microwave oven on high for about 4-5 minutes, until the onions begin to become translucent.
While the onions are cooking, wash, peel and split the plantains in two lengthwise. Slice each half into 1/4 inch slices. (If you desire smaller sized pieces, split each half lengthwise again before slicing.) When the onions are cooked, add the plantain pieces to the baking dish. Add the peas, curry powder, cinnamon, raisins, and walnuts. Mix well. Cover and place back in the oven and cook until the peas are hot.
When you remove the baking dish from the oven, if everything is sticking together add a little water or apple juice and mix well so that the pieces separate.
When the rice is cooked, add the rice to the baking dish, and mix everything together. Add water or apple juice as needed. Cover and bake for another five minutes.
