Preparation

Greek style potatoes and green beans is a delicious, easy to make, vegan recipe that will serve 4 adults as a main meal. Serve with a large tossed mixed greens and veggies salad.

Wash and peel the potatoes and cut into 1/2" to 3/4" cubes and place in a covered baking dish.

If the Green Beans are fresh, wash and cut of the stem ends and split lengthwise, and add to the baking dish.  If the Green Beans are frozen, just add to the baking dish.

Add the Onions and Parsley.  Add the Tomato Paste and rinse the can out with a little water (1/4 can) and add to the baking dish.

Cook in a microwave oven on high or in a regular oven at 350 degrees F.  Mix the ingredients every 10 to 15 minutes.  When the onions become semi translucent and the potatoes are soft remove from the oven.  Total cooking time should be about 45 minutes.

Enjoy!

Vegan FlagThe above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
