Salad Dressing - Nectarine Balsamic Vinaigrette


1 cup Water
1/2 cup Balsamic Vinegar
2 to 2-1/2 cups Nectarines, very ripe, pitted
1/8 tsp. Stevia Extract, or to taste
1/2 tsp. Guar Gum (for thickness)

Place the water and balsamic vinegar in the container of a high speed blender.

Thoroughly wash the nectarines cut in half or quarters and remove the pits.  Place the nectarine sections in the blender container, cover, and run the blender at high speed until the contents are smooth.

Taste the dressing for sweetness and thickness and add the stevia for desired sweetness, and the guar gum to achieve the desired thickness.  Cover the container and run the blender at medium speed for about a minute.

Pour into a serving or storage container.  Left over dressing can be stored in the refrigerator for several days in a covered bottle.
