Ingredients

Spaghetti Squash Veggies
1 Spaghetti Squash, medium size
1 lb. Peas, frozen
2 Onions, medium size
2 tsp. Basil, dried leaves
2 tsp. Oregano, dried leaves
1 tsp. Garlic Powder (optional)
1/2 tsp. Fennel Seeds
2 6-oz. cans Tomato Paste
Nutritional Yeast

Preparation

Spaghetti squash veggies is a delicious low calorie vegan recipe. This recipe will serve 4 adults and takes one hour to prepare and cook in a microwave oven.

Begin by washing the spaghetti squash. Push a knife blade into the seed cavity and place in a baking dish, cover, and place the dish in the microwave oven on high until the squash is tender.

While the squash is cooking, peel and dice the onions and add them to another microwavable covered baking dish. Add the peas and seasonings and cook on high until the onions are semi-translucent. Add the tomato paste and just enough water to blend in the tomato paste.

When the squash is cooked, cut in half lengthwise, remove the seeds and with a metal spoon  carefully remove squash skin. Separate the spaghetti squash strands with two table forks and mix together with the sauce.

Reheat to serving temperature, sprinkle on some nutritional yeast, serve and enjoy.
