Tomatoes and Celery Stuffed with Lentil Chili
Ingredients
Plum or Roma Tomatoes
Celery
Lentil Chili, thick, chilled
Salsa

Preparation
This is another great recipe for an appetizer, side dish, snack, and for using leftover lentil chili.
In a bowl, place the amount of lentil chili you want to use as the filling and mash with a potato masher until about half of the lentils are split open.
Wash the plum or Roma tomatoes, and cut in half lengthwise. Cut out the stem connection.
Using a small sharp knife or a grapefruit knife, hollow out the center of each tomato half, leaving the outer flesh and skin intact. We put the center part of the tomatoes in our salad.
Using a teaspoon, fill the cavity of each tomato half with the mashed lentil chili.
Wash the celery stalks and cut into 3-4 inch lengths. Fill each cavity with the mashed lentil chili.
Top the stuffed tomatoes and celery with a little salsa.
Serve and enjoy!
