Breakfast Recipes
Ol’fashioned Oatmeal, of course!
It wouldn’t be right not to include the traditional
breakfast cereal for what is considered to be the most important meal of
the day. Here is a classic recipe you can enjoy every day of the week:
2 cups boiling water
1 cup oats, rolled, steel cut, or otherwise
After water comes to boil, slowly add oats, stirring
constantly.
Keep watch as you stir, and after 5 or 6 minutes, oats should be soft
and milky. Steel cut oats may take a few minutes longer. If they become
dry, add some water or soy/ rice milk, and continue stirring.
They are now ready for you to just add:
* Raisins, cherries, blueberries, peaches (dried/fresh)
* chopped nuts, shredded coconut
* Seeds (sesame, sunflower, pumpkin)
* a dab of vegan margarine and some soy, almond, oat, rice or
multi-grain milk.
Hominy Grits can be used
in place of rice or as breakfast cereal. To cook: add 1/4 cup
grits to 3/4 cup boiling water, simmer for 7-10 minutes. Add
salt, Sucanat, maple syrup, dairy-free milk to taste. (Serves
