A Mary T. Hoffman Commentary from All-Creatures.org

"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful.  At the same time, I see all the suffering and corruption going on in the world, and feel called to help expose and end it so that we may have true peace and compassion.

Hoffman Helpful Hint: Flax Seed – 20 January 2008
By Mary T. Hoffman

Do you want to get your omega-3s but would rather skip the mercury, PCBs, and dioxin found in fish? Then start using flax seed.

My husband and I add four tablespoons of brown flax seed to our breakfast smoothie (vegetable or fruit) that we make in our high-speed blender. Flax seed can also be ground up and sprinkled on whatever you’re eating. Blending or grinding flax seeds aids in the absorption of their nutrients which could otherwise pass right through, undigested.

Two tablespoons of flax seeds provide the essential fatty acids needed, as well as many vitamins, iron, zinc, high-quality protein, soluble fiber, and phytonutrient lignans. To prevent rancidity, we store flax seeds in our freezer until we’re ready to use them.
