Basmati rice vegetable curry is a relatively easy to prepare vegan recipe that will serve 6 adults as a main meal. Preparation time is about 15 minutes, cooking time is about 30 minutes in a microwave oven and about 60 minutes in a conventional oven, and combining everything together takes another 5 minutes. Leftovers can be stored in the covered baking dish or other covered containers in the refrigerator for a few days without loss of flavor.
We begin by washing and cleaning the veggies and peeling the carrots and onions.
Place the rice pot and water on the stove top and bring the water to boiling.
While the water is heating, dice the veggies and put into the baking dish along with the seasoning, and cook until the onions become semi-translucent (mixing every 10 minutes to ensure uniform cooking).
When to water in the rice pot begins to boil, add the brown basmati rice, cover, lower the heat to simmer, and cook until all the water is absorbed into the rice.
When the onions in the baking dish become semi-translucent, add the crushed tomatoes and raisins, mix well, and cook for another 5-10 minutes.
When the curried ingredients in the baking dish and the rice are cooked, combine everything together by thoroughly mixing, cover the dish and let the flavors blend together for about 5 minutes.
Serve and Enjoy with a large mixed greens and veggie salad.
