Kale butternut squash curry is a delicious vegan recipe that will serve 6 adults as a main meal. Preparation time is about 20 minutes, and cooking time is about 30-40 minutes in a microwave oven at 1000 watts. This kale butternut squash curry recipe can also be made in a conventional oven at 350 degrees F., but the cooking time will be longer. Leftovers can be stored in the covered baking dish or other covered containers in the refrigerator for a few days.
We begin by washing and cleaning the Kale, and peeling the butternut squash, garlic, and onions.
Cut or chop the kale and place in a large covered microwaveable baking dish. Dice the onions and crush the garlic and add to the baking dish.
Cut the stem and flower ends off of the butternut squash, and split in half lengthwise. Scoop out the seeds and save for roasting (if desired), slice each half into 1/2 inch slices, and cut each slice into cubes. Add to the baking dish along with the other ingredients. If you like a stronger tomato flavor, use 2 cans of tomato paste.
Mix all the ingredients in the baking dish, and place the covered baking dish in the microwave oven on high, and cook until the ingredients are tender, mixing every 10 minutes to ensure uniform cooking.
When the curry is cooked, remove from the oven and serve.
