Portabella Mushrooms and Peas

Ingredients

6 Portabella Mushrooms
3 Onions, medium size
1 lb. Peas, frozen
4 tbsp. Tomato Paste
3 tbsp. Balsamic Vinegar
4 tbsp. Molasses, unsulphured
3 tbsp. Soy Sauce or Bragg Animos
1 tbsp. Oregano, dried leaves
Hot Sauce, to taste
2 cups Brown Rice cooked in 4 cups of water

Preparation

This recipe will make 4-6 servings when served over a bed of brown rice; and it can be prepared in a covered baking dish in the microwave oven, or in a wok.

We begin by placing the rice pot on the stovetop with the water and turning the heat to high to boil the water.

While the water is heating, we wash and clean the portabella mushrooms and peel the onions.

When the water in the rice pot begins to boil, add the brown rice, cover, reduce the heat to simmer, and cook until all of the water is absorbed.

Dice the onions and place in the covered dish or wok with the hot sauce, mix, and cook until the onions are semitransparent.

While the onions are cooking, mix the tomato paste, balsamic vinegar, molasses, and soy sauce together, and mix until the sauce is smooth.  Add the oregano and mix again.

Cut the portabella mushroom caps and stems into bite sized pieces, and add to the pre-cooked onions.  Add the peas and the sauce.  Mix and cook until the peas and portabella mushrooms are cooked.

Serve over a bed of brown rice and enjoy!
